  1. cumin-LIME VINAIGRETTE:

  2. 3 tablespoons white wine vinegar or cider vinegar

  3. 2 tablespoons fresh lime juice

  4. 1 tablespoon minced parsley or fresh cilantro

  5. 1/2 teaspoon ground cumin

  6. 1 teaspoon sugar

  7. 1/2 cup olive oil

  8. chicken TACOS:

  9. 3 boneless, skinless chicken breast, julienned

  10. 2 T butter

  11. 2 T olive oil

  12. 1/2 onion , chopped fine

  13. 1 package taco seasoning

  14. 1 t cumin

  15. 1 T chopped garlic

  16. 1/4 c chicken stock

  17. 1 small can green chiles, drained

  18. juice and zest of 1/2 lime

  19. 1 T tequila

  20. Toppings:

  21. Shredded lettuce

  22. chopped tomatoes

  23. sliced black olives

  24. sliced jalepenos - optional

  25. Shredded cheese

  26. sour cream

  27. Hard or soft taco shells

  1. Cumin Lime Vinaigrette:

  2. Whisk all ingredients together until well blended.

  3. Refrigerate dressing.

  4. Chicken Tacos:

  5. Melt butter with olive oil in nonstick skillet Add remaining taco ingredients Cook about 8-12 minutes, until chicken is cooked through and liquid reduces Put it Together:

  6. Heat hard shells in oven, or soft shells in damp paper towels in microwave Stir together dressing, lettuce, tomatoes and olives - Use dressing a little at a time here, will have some left (and jalepenos)

  7. Place filling in taco shells, top with salad, cheese and sourcream
