  1. Key Lime Cheesecake

  2. 1 1/2 cups chocolate wafer cookie crumbs

  3. 2 tablespoons sugar

  4. 1/3 cup butter or margarine, melted

  5. 1 envelope unflavored gelatin

  6. 1/4 cup lime juice

  7. 3 eggs, separated

  8. 1/2 cup sugar

  9. 1 teaspoon grated lime rind

  10. 16 ounces soft cream cheese

  11. few drops green food coloring, optional

  12. Combine crumbs, sugar and butter; press onto bottom of 9" springform

  13. 325 degrees,

  14. 10 min. Cool.

  15. Soften gelatin in lime juice; stir over low heat until dissolved.

  16. Add combined egg yolks, 1/4 cup sugar and lime rind; cook over low

  17. heat 5 min., stirring constantly. Cool. Gradually add to cream

  18. cheese, mixing with electric mixer until well blended. Add food

  19. coloring.

  20. Beat egg whites until foamy; gradually add remaining sugar, beating

  21. until stiff peaks form. Fold into cream cheese mixture. Pour over

  22. crust; chill until firm.
