  1. 1/2 cup frozen egg substitute, thawed

  2. 2 tablespoons lemon juice

  3. 1/8 teaspoon Creole seasoning

  4. 1/3 cup melted margarine

  5. 2 English muffins, split and toasted

  6. 1/2 pound sliced turkey ham

  7. 1 medium tomato, cut into 4 slices 1 (14-ounce) can artichoke hearts, drained and cut in half

  1. In blender container, combine egg substitute, lemon juice, and Creole seasoning. With motor running, slowly add hot margarine in a steady stream, until blended.

  2. Pour mixture into a 1-cup glass measure; microwave on DEFROST for 1 minute. Stir mixture and microwave 30 seconds longer. Allow mixture to stand 1 minute.

  3. Spoon 2 tablespoons of sauce over each muffin half. Top with ham slice (cut to fit, if necessary), tomato slice and 2 artichoke heart halves. Top with 2 more tablespoons sauce.
