  1. 1 can (8 oz) crushed pineapple in juice, undrained

  2. 2 tablespoons canola oil

  3. 1 egg

  4. 1 1/4 cups whole wheat flour

  5. 3/4 cup packed brown sugar

  6. 1/2 cup raisins

  7. 1 teaspoon baking powder

  8. 1/2 teaspoon baking soda

  9. 1/2 teaspoon salt

  10. 1/2 teaspoon ground cinnamon

  11. 1 cup shredded carrots (1 1/2 medium)

  12. 1 cup chopped walnuts

  1. Heat oven to 350°F. Grease bottom and sides of 8x4-inch loaf pan with shortening or cooking spray.

  2. In medium bowl, mix pineapple (with juice), oil and egg. Stir in remaining ingredients until blended. Spread batter in pan.

  3. Bake 50 to 55 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Remove from pan to cooling rack. Cool completely, about 1 hour, before slicing.
