  1. 3 tablespoons 45ml Butter

  2. 2 tablespoons 30ml Flour

  3. 1 cup 237ml Milk

  4. 2 tablespoons 30ml White horseradish - (to 3 tbspns)

  5. 1/2 teaspoon 2 1/2ml Dijon mustard

  6. 1 tablespoon 15ml White wine vinegar

  7. 2 tablespoons 30ml Sour cream - (to 4 tbspns) -

  8. Salt - to taste

  9. Freshly-ground black pepper - to taste

  1. In a small saucepan, melt butter. When foaming subsides, stir in flour and cook, stirring continuously for about a minute or two. Whisk in the milk, bring to a boil and simmer for 5 minutes. Add horseradish, mustard and vinegar and remove from heat. Stir in sour cream and season with salt and pepper.

  2. This recipe yields 1 1/2 cups.
