  1. 8 tablespoons butter or margarine

  2. 1/4 cup diced onion

  3. 1 cup uncooked long grain white rice

  4. 2 cups water

  5. 1/2 teaspoon dried parsley flakes

  6. 1 pinch saffron threads

  7. 3 drops yellow food coloring

  8. DIRECTIONS

  9. 1. Melt butter or margarine in a medium, non-stick pot over medium heat. Cook and stir onion until golden. Add rice, and stir to coat. Stir in water, parsley flakes, saffron, and 3 drops of yellow food coloring. Reduce heat, cover, and simmer for 20 minutes.
