  6. 4 Tbsp balsamic vinegar

  7. 1 Clove garlic -- minced

  8. salt

  9. freshly ground pepper

  10. 1/4 lb cherry tomatoes, yellow -- halved

  11. 1/4 lb cherry tomatoes, red -- halved

  12. 6 oz smoked mozzarella or scamorza -- coursely grated

  13. 1/4 c basil leaves -- thinly sliced

  14. PREPARATION:

  15. In a bowl, whisk together the oil, vinegar and garlic. Season with salt

  16. and pepper. Add

  17. cherry tomatoes & toss together. Leave at room temperature. Can be

  18. prepared several hours

  19. ahead. Heat broiler. Place cheese on top of focaccia or half loaf of It.

  20. bread (toasted) or slices of toasted bread. Place under broiler until cheese is melted and crust is golden.

  21. Remove from oven and top with tomato mixture and basil. Serve immediately --
