  1. 1 tbsp vegetable oil

  2. 1/2 cup raisins

  3. 125 mL

  4. 4 green onions, sliced

  5. 1 stalk celery, thinly sliced

  6. 1 red pepper, chopped

  7. 1 cup finely chopped cooked ham

  8. 250 mL

  9. 3 cups cooked long grain rice

  10. 750 mL

  11. 4 eggs, lightly beaten

  12. 1 tbsp soya sauce

  13. 15 mL

  14. Toasted sliced almonds

  15. 4 cups cooked oriental vegetables

  1. In large skillet, heat oil over medium heat. Add raisins, green onions, celery, red pepper and ham, and saut é until vegetables are tender-crisp. Stir in rice. Make well in centre of rice mixture; add eggs and soya sauce. Cook, gradually stirring eggs into rice, until eggs are just set. Garnish with almonds, if desired. Serve with oriental vegetables.

  2. Suggestions For a complete meal, serve with a whole wheat roll, an apple and yogurt.

  3. Cooked rice will keep up to 1 week in a tightly covered container in the refrigerator and up to 3 months in the freezer.
