  1. 1 firmly packed brown sugar

  2. 1/3 c. butter

  3. 1/3 c. light corn syrup

  4. 1/4 c. heavy cream

  5. 1 egg, slightly beaten

  6. 2 c. pecan pieces, toasted

  7. 1/2 tsp. vanilla

  8. 1 baked

  9. 9 inch pie shell

  1. Combine sugar, butter, corn syrup, and heavy cream in a heavy 10 inch skillet. Bring to boiling over medium heat, stirring constantly. Once mixture has come to a boil stop stirring. Boil 4 minutes; mixture should be thick with large bubbles on surface. Remove from heat. Quickly stir in some of hot mixture into egg in a small cup. Stir egg mixture into skillet. Stir in pecans and vanilla until well combined. Do not allow to boil. Pour in prebaked pie shell. Bake in preheated oven for 20 to 30 minutes until center is almost set. Cool on wire rack.
