  1. 1 1/2 tablespoons 22ml Vegetable oil

  2. 2 oz 56g Onion - cut into half rings

  3. 1 Garlic clove - very finely chopped

  4. 1 teaspoon 5ml Curry powder - as bolst's hot

  5. 1 packet Good quality oil packed tuna - undrained

  6. 1 Fresh hot green chili - cut into fine rounds

  7. 1 piece fresh ginger root - peeled, julienned

  8. 3 tablespoons 45ml Coriander leaves - chopped Salt and pepper - to taste

  1. Recipe Instructions Put oil in non stick frying pan and set over medium-high heat. When hot, put in onion and garlic. Stir-fry until onion turns brown ant edges. Add curry powder; mix. Add tuna; mix well. Turn heat to low and add green chili, ginger and coriander; mix. Check for seasoning; mix and turn off heat. Serve hot or cold. As a sandwich filling, puff pastry filling, pasta salad.
