  1. 1 tb Olive Oil

  2. 1/4c Onion, finely chopped

  3. 1/2c Red and Green Peppers

  4. 1/4c Cooked Ham,

  5. 1/4" cubes

  6. 1 c Converted Rice

  7. 1 1/4c Water

  8. 1 Bay Leaf

  9. 2 Fresh Thyme Sprigs

  10. 1/2ts Dried Thyme

  11. 1 Tabasco Sauce

  12. 1 Salt

  13. 1 Pepper, freshly ground

  14. 1 tb Butter

  1. + Servings: 4 * The 1/2 cup of red and green peppers should be cut in small cubes.

  2. Heat the oil in saucepan and add the onion, peppers and ham and cook, stirring, until wilted.

  3. Add the rice and stir.

  4. Add the water, bay leaf, thyme, Tabasco, salt and pepper.

  5. Stir well and bring to a boil.

  6. Cover and simmer for exactly 17 minutes.

  7. Remove from the heat, discard the bay leaf and thyme sprigs.

  8. Add the butter and stir to fluff the rice while blending.

  9. Serves 4.
