  1. 1 15-ounce can black-eyed peas, rinsed

  2. 1/4 cup fresh parsley leaves

  3. 2 tablespoons lemon juice

  4. 2 tablespoons extra-virgin olive oil

  5. 1 1/2 teaspoons chopped garlic

  6. 1 1/2 teaspoons chopped fresh tarragon, or 1/2 teaspoon dried

  7. 1/8 teaspoon salt

  8. Freshly ground pepper, to taste
