  1. Chipotle sauce*

  2. 1 lb 454g / 16oz Ground beef

  3. 1 lb 454g / 16oz Ground pork

  4. 2 lbs 908g / 32oz Eggs (large)

  5. 1/2 cup 73g / 2.6oz Dry bread crumbs

  6. 1/2 cup 118ml Milk

  7. 2 tablespoons 30ml Onion - finely chopped

  8. 2 tablespoons 30ml Fresh cilantro - snipped

  9. 2 teaspoons 10ml Salt

  10. 1/2 teaspoon 2 1/2ml Pepper

  1. Prepare Chipotle Sauce and set aside.

  2. Mix remaining ingredients together and shape into 1 1/2-inch meatballs.

  3. Heat sauce and meatballs to boiling; then reduce the heat.

  4. Cover and simmer until meatballs are done, about 20 minutes.

  5. Serve with hot cooked rice or noodles, if desired.
