  1. 1kg ripe tomatoes, peeled and seeded

  2. 4 garlic cloves

  3. 5 slices white bread , crusts removed

  4. 2 teaspoons harissa paste

  5. 1 tablespoon tomato paste

  6. 200ml extra virgin olive oil

  7. Pinch of caster sugar

  8. Salt and pepper to taste

  9. 1/2 cup plain yogurt

  10. 1/4 cup parsley, chopped

  11. Basil leaves for garnish

  12. 3-5 minutes or until smooth. Season it with salt and pepper. Add a pinch of caster sugar as well. Mix well. You can add a little water if it is too thick. Pour the soup in a sealed container and refrigerate it for 2 hours or until it is chilled.

  13. Pour it into individual glasses. Place a dollop of yogurt on each glass and garnish them with chopped parsley and a basil leaf. Serve immediately.
