  2. 4 boneless, skinless chicken breast halves, about 6 to 8 ounces each 1 red bell pepper, stemmed, seeded and thinly sliced

  3. 2 fresh banana peppers, stemmed, seeded and thinly sliced

  4. 1 large onion, peeled and sliced

  5. 2 medium red potatoes, sliced

  6. 2 tbsp. dried thyme

  7. 1 tsp. chopped fresh parsley leaves

  8. 1/2 tsp. salt

  9. 1/4 tsp. pepper

  10. 1/4 cup olive oil

  1. Preheat the oven to 350 degrees. Lightly coat the bottom of a 9x3 inch baking pan with nonstick spray. Arrange the chicken in the prepared pan. Place the peppers, onion and potatoes over the chicken. Sprinkle with the thyme, parsley, salt and pepper. Drizzle with the olive oil. Cover the pan tightly with foil and bake 1 hour. Divide the chicken and vegetables between plates and serve immediately.
