  1. 1 red pepper

  2. 1 green pepper

  3. 1 yellow pepper

  4. 2 onions

  5. 3-4 portobello or other mushrooms

  6. 3-4 cloves garlic olive oil balsamic

  1. Preheat oven to 400 degrees. Slice the peppers lengthwise. Thinly slice the onion. Slice the mushrooms and mince the garlic. Put all the ingredients on a foil covered baking sheet (makes cleanup a snap). Sprinkle with olive oil and a generous portion of balsamic vinegar. Roast about 1 1/2 hours or until the peppers are soft. Place in serving bowl and throw away the foil.
