  2. JEREMY RIFKIN'S BLACK BEAN SOUP

  6. 2 c Black beans

  7. 4 md Onions -- coarsely chopped

  8. Peanut oil

  9. 1 lg Green pepper -- chopped

  10. 4 lg Garlic cloves -- finely

  11. --chopped

  12. 1 t Cumin

  13. 1 t Oregano

  14. 1/2 ts Dried mustard

  15. 2 c Tomatoes, fresh -- peeled,

  16. --chopped for use OR 1 1/2 c Tomatoes, canned

  17. Juice of 1 lemon

  18. Salt and pepper to taste

  19. Soak the beans in water overnight. Next day, in a

  20. 5 cups of water

  21. 1 hour or more, until tender. Meanwhile, pour a small amount of

  22. oil in a frying pan and saute the onions, green pepper

  23. and garlic until tender. Add the seasonings.

  24. When vegetables are browned, add them to the soup pot

  25. along with the tomatoes and cook another half hour.

  26. Add water if the soup is too thick. Before serving,

  27. add the lemon juice. Serve soup with a plate of corn

  28. chips, guacamole, and a fresh green salad.
