  1. 2 lbs 908g / 32oz Shad fillets - skin on

  2. 1/4 cup 59ml Vegetable oil

  3. 2 tablespoons 30ml Lemon juice

  4. 1 tablespoon 15ml Grated onion

  5. 1 teaspoon 5ml Paprika

  6. 1 1/2 teaspoons 7 1/2ml Salt

  7. 1/4 teaspoon 1 1/3ml Thyme - crushed

  8. 1 Freshly-ground black pepper

  9. Chopped fresh parsley - for garnish

  10. Lemon wedges - for garnish

  1. Cut fillets into serving-size portions if necessary. Combine all ingredients except fish, parsley and lemon wedges to make sauce.

  2. Place fish, skin-side up, on well-greased broiler pan. Brush with sauce. Broil about 3 inches from heat source for 5 minutes. Turn carefully and brush other side with sauce. Broil 5 to 7 minutes longer or until fish is lightly browned and flakes easily when tested with a fork.

  3. Sprinkle with parsley and garnish with lemon wedges.

  4. This recipe yields 4 servings.
