  1. 1 cup blue cornmeal

  2. 1 cup all-purpose flour

  3. 3 tablespoons sugar

  4. 4 teaspoons baking powder

  5. 1/2 teaspoon salt

  6. 1 1/4 cups milk

  7. 1 egg, lightly beaten

  8. 3 tablespoons butter, melted

  1. Preheat oven to 425 degrees F. In a medium bowl, stir together cornmeal, flour, sugar, baking powder, and salt. In a small bowl, whisk together milk, egg, and melted butter.

  2. Stir milk mixture into cornmeal mixture just until moistened (mixture will be slightly lumpy). Turn mixture into a greased 8 x 8 x 2-inch baking pan. Bake about 20 to 25 minutes or until a toothpick inserted in center comes out clean.
