  1. 6 teaspoons 30ml Carrots - cut 1/2" chunks (medium)

  2. 1/2 cup 73g / 2.6oz Finely-chopped green pepper

  3. 1/2 cup 31g / 1.1oz Finely-chopped onion

  4. 3 Chicken breasts - cut lengthwise

  5. 1/2 teaspoon 2 1/2ml Salt

  6. 1 Sweet and sour sauce - (10 oz)

  7. 1 Pineapple chunks - (15 1/2 oz) - drained

  8. 3 tablespoons 45ml Cornstarch

  9. 3 tablespoons 45ml Cold water

  10. Hot cooked rice

  1. In a crockery cooker, place carrots, green pepper and onion. Top with chicken breasts. Sprinkle with salt. Pour sweet-and-sour sauce and pineapple chunks over all. Cover. Cook on LOW 7 to 8 hours or HIGH 3 1/2 to 4 hours.

  2. Remove chicken, keeping it warm. Blend cornstarch and water, stir into juices in crockpot. Cover; cook on HIGH 10 to 15 minutes or until thickened. Season to taste and serve over rice.

  3. This recipe yields 6 servings.
