  4. 1 Whole green pepper -- sliced

  5. 1/2 Teaspoon ginger

  6. 1 Tablespoon corn starch

  7. 2 Tablespoons vinegar

  8. 1 Tablespoon soy sauce

  9. 1/2 Cup apricot preserves

  10. 3 Pounds fryer -- cut up

  11. 1 Can pineapple chunks -- drained

  1. Place butter, onion and pepper in a small casserole. Microwave at high(100%) until tender, 3 to 4 minutes. Combine ginger and corn starch. Addvinegar, soy sauce and preserves. Stir into onion and pepper. Microwave athigh (100%) until hot and bubbly, 1 to 2 minutes. Set aside.

  2. Place chicken pieces in an oblong casserole, skin side down, with thickerportions to outside edge of dish. Cover with wax paper. Microwave at mediumhigh (70%) 12 minutes. Drain. Turn chicken pieces over, keeping thickerportions to outside edge of dish. Spoon sauce over chicken. Cover with waxpaper. Microwave at medium high (70%) until chicken is tender, 12 to 15minutes. Stir in pineapple. Microwave at medium high (70%) until pineappleis heated, 2 to 3 minutes. Serve with rice.
