  8. 2 tablespoons favorite broth

  9. 12 cups yellow onions -- thinly sliced

  10. 1/4 cup balsamic vinegar

  11. In a large saucepan over medium-high heat, warm the broth.

  12. Add the onion, cover, and cook until translucent and very

  13. soft, about 45 minutes.

  14. Uncover, lower the heat, and simmer for 1 hour, stirring

  15. periodically. Add the vinegar and cook until the onion is

  16. caramelized, about 1 hour longer. Use immediately, or store in a glass or plastic container in the refrigerator for up to 10 days.

  17. Makes 2 cups.

  18. Use as a pizza topping.
