  5. 1/2 c extra virgin olive oil

  6. 6 cloves garlic, -- thinly

  7. : sliced

  8. 18 sundried tomato halves, --

  9. : thinly sliced

  10. 1/4 c dry white wine

  11. 1 lb fresh Tagliatelle, --

  12. : preferably homemade

  13. 2 bn rucola, stemmed, washed and : spun dry -- to yield 4 cups

  14. Bring 6 quarts water to boil in a large spaghetti pot

  15. and add 2 tablespoons salt.

  16. In a 12-inch sautJ pan, heat olive oil over medium

  17. heat. Add garlic and cook until light golden brown.

  18. Add sundried tomato pieces and wine and remove from

  19. heat. Drop tagliatelle into boiling water and cook

  20. 1 minute

  21. and pour into pan with sundried tomatoes. Return to

  22. heat and toss in the rucola, stir gently for about 30

  23. seconds until rucola is slightly wilted and serve

  24. immediately. Yield: 4 servings
