  6. 1 ga Chicken broth, lo salt,

  7. -divided

  8. 4 lb Chopped celery

  9. 3/4 c Rice wine vinegar

  10. 3/4 c Low sodium soy sauce

  11. 1/2 c Cornstarch

  12. 1/3 c Fresh minced ginger

  13. 1 ts Red pepper flakes

  14. 2 lb Sunchokes

  15. 2 lb Jimaca

  16. 2 lb Tofu, drained and diced

  17. 3 c Sliced scallions

  18. 1 c Water

  19. 1 c Egg substitute

  20. 2 tb Sesame oil

  21. 1. In a large soup pot, heat 2 cups of broth. Add celery, cover and steam

  22. for 3-4 minutes.

  23. 2. Uncover, and add remaining chicken broth, vinegar, soy sauce, ginger,

  24. and red pepper. Bring to boil. Reduce heat and simmer 12-14 min.

  25. 3. Add tofu, sunchokes, jimaca and scallions and bring to a boil. Combine

  26. cornstarch and water and mix to create a paste. Whisk mixture into boiling

  27. soup and cook until thickened, and remove from heat. Whisk in egg

  28. substitute and sesame oil if desired.
