  1. 3 ounces blue stilton cheese

  2. 3 ounces bacon --

  3. 6 ounce 6 ounces celery -- chopped

  4. 2 ounces onion -- chopped

  5. 1/2 ounce cornstarch

  6. 1 ounce butter

  7. 1 1/2 cups chicken stock

  8. 1 1/2 cups milk salt & pepper to taste

  9. 1 pinch paprika

  1. Preparation : Chop bbacon finely. Put in pan heat gently; then drain. Stir in celery onions and butter and cook slowly, stirring well until celery and onions are colored. Sprinkle in cornstarch and cook for 1 minute. Gradually add milk, pepper. Bring to boil and simmer for10 minutes. Strain or puree in a blender. Reheat, crumble in cheese and sprinkle with paprika. Makes 4-6 servings
