  1. 3/4 cup unsalted butter

  2. 1/4 pound cream cheese

  3. 1 cup yellow cornmeal

  4. 2 cups flour

  5. 1/2 teaspoon salt

  1. Preparation : combine butter and cream cheese in a mixer bowl-cream together to mix well sift cornmeal, flour, and salt together into butter mixture-mix well knead briefly divide into 1-inch diameter balls rollout and press onto the bottom and up the sides of a mini-muffin tin bake @ 350 degrees for 18-20 minutes, until lightly browned remove from oven and allow to cool fill and serve as desired
