  1. 1 kg sweet potato , diced

  2. 1 red onion , sliced

  3. 1 garlic clove , crushed

  4. 1/2 cup chicken stock

  5. 40 g butter

  6. 1/4 cup plain flour

  7. 1 1/4 cups low-fat milk

  8. 1/4 cup chicken stock, extra

  9. 1 teaspoon fresh thyme

  10. 1/2 cup whole wheat bread crumbs

  11. 1/4 cup grated low-fat cheese

  1. Combine sweet potato, onion, garlic & stock in a pan, cover & simmer until potato is tender, drain.

  2. Placew sweet potato into a greased oven-proof dish.

  3. Melt butter in a pan, stir in flour & stir over heat until bubbling.

  4. Remove from heat and gradually stir in combined milk & extra stock.

  5. Return to heat & stir until sauce boils & thickens, stir in thyme.

  6. Pour sauce over sweet potato and top with breadcrumbs & cheese.

  7. Bake at 180.C for approx 20 mins or until nicely browned.
