  1. 1 envelope unflavored gelatin

  2. 1/3 cup honey

  3. 1/4 tsp. salt

  4. 1 cup mashed bananas (3 bananas)

  5. 1 tbsp. lemon juice One

  6. 8 oz. container plain yogurt

  7. 2 egg whites, unbeaten

  1. In a small saucepan mix gelatin with 1/4 cup cold water. Let stand 1 minute; then stir over medium heat until gelatin is completely dissolved, about 1 minute. Stir in honey and salt. Remove from heat and stir in mashed bananas and lemon juice. Stir in yogurt. Pour the mixture into a freezer tray. Freeze until firm. Turn frozen mixture into a large bowl. Add the egg whites and beat at high speed with an electric mixer until the mixture is smooth and fluffy, about 10 minutes. Return to pan and freeze again. Makes 4 cups or 6 to 8 servings.
