  1. 406 g can Italian style stewed tomatoes with juices

  2. 453 g ground beef

  3. 3/4 cup Italian seasoned dry breadcrumbs

  4. 1 cup finely chopped green bell pepper

  5. 3/4 cup finely chopped onion

  6. 1 large egg, beaten to blend

  7. 1/2 cup shredded Mozzarella cheese

  1. Preheat oven to 375 degrees. Coat a sheet pan with cooking spray. Drain the tomatoes, reserving 1/3 cup juices. Combine the tomatoes, reserved tomato juices, ground beef, breadcrumbs, bell pepper, onion and egg in a large bowl and mix until well combined. Form the beef mixture into six 1 inch thick loaves. Place the mini meatloaves on the prepared pan and sprinkle with the Mozzarella. Bake the meatloaves about 20 minutes until cooked through. Serve meatloaves immediately.
