  1. Peposo

  2. 2 pounds of beef cubed for stew

  3. 10 cloves garlic, peeled

  4. 1 teaspoon sea salt

  5. 1 scant tablespoon black peppercorns

  6. 1 bottle decent red wine (750 ml)

  7. Crack the peppercorns in a mortar (watch out, they like to skip

  8. all over the kitchen). Put the beef, garlic, salt, and pepper in

  9. a large pot, preferably terracotta

  10. 1 . Pour the wine over until

  11. it just covers the meat. Bake in a 375-degree oven for about three

  12. hours.

  13. Note: If your pot is pyrex or metal, lower the temp to 350 or 325.

  14. I cook this in a large crockpot set on high for about five or six

  15. 300 degrees
