  1. Thai Fruit and Shrimp Salad (Yam Polamal)

  2. 2 cups assorted fruits

  3. 2 tablespoons oil

  4. 1 shallot, thinly sliced

  5. 3 cloves garlic, thinly sliced

  6. juice of 1 lime

  7. 1 teaspoon kosher salt

  8. 1 teaspoon sugar, or to taste

  9. 1/4 cup cooked shrimp

  10. 2 tablespoons chopped raw peanu

  11. 1 fresh red chile, seeded, finely shredded

  12. Use sliced green apples, pears, tangerine or orange sections,

  13. grapefruit or pomelo, halved and seeded grapes, strawberries, firm

  14. papaya.

  15. Cut the fruit into bite-sized pieces. If using pomelo, peel the

  16. individual sections and break them apart into grains about the size

  17. of a grape seed. Toss apple or pear slices in a little citrus juice

  18. to keep them from oxidizing.

  19. Using a small skillet or saucepan, heat the oil over low heat and gently fry the shallot and garlic in it until lightly browned.

  20. Remove and drain on paper towels. Discard the oil or reserve it

  21. for another use.

  22. Combine the lime juice, salt and sugar (if used) in a medium bowl

  23. and stir to dissolve. Add the fruits, shrimp and half the garlic

  24. and shallot: toss to coat evenly with dressing. Taste for seasoning

  25. and adjust if necessary. Transfer to a serving dish and garnish

  26. with the remaining garlic and shallot, peanuts and chile shreds.
