  1. 8 ounces uncooked rigatoni

  2. 1 tablespoon olive oil

  3. 1 cup finely chopped onion

  4. 1 (10-ounce) package frozen chopped spinach , thawed

  5. 3 cups cubed cooked chicken breasts

  6. 1 (14 1/2-ounce) can Italian-style diced tomato es

  7. 1 (8-ounce) container chive-and- onion cream cheese

  8. 1/2 teaspoon salt

  9. 1/2 teaspoon pepper

  10. 1 1/2 cups (6 ounces) shredded mozzarella cheese

  1. Prepare rigatoni according to package directions. Meanwhile, sauté onion in olive oil until tender. Transfer to large bowl. Drain chopped spinach well, pressing between layers of paper towels. Stir rigatoni, spinach, chicken, and next 4 ingredients into onion in bowl. Spoon mixture into an 11 x 7 baking dish, and sprinkle evenly with shredded mozzarella cheese. Bake, covered, at 375° for 30 minutes; uncover and bake 15 more minutes or until bubbly.
