  1. 6 oz cubed ham or bacon

  2. 2 yellow onion s chopped

  3. 3 cloves garlic roughly chopped

  4. 4 carrot s peeled and thinly chopped

  5. 3 bay leaves

  6. 2 cups lentil s rinsed(red and yellow make a nicer looking soup)

  7. 7 cups chicken or vegetable broth

  8. 1 can crushed tomato es

  9. 12 oz potato es, peeled and chopped

  10. salt and fresh ground pepper to taste

  1. In a large stock pot saute ham or bacon, onions, garlic, carrots, and bay leaves on medium low heat until softened but not browned. Add lentils, broth, and tomatoes to the pot. Bring to boil, remove any scum from the surface, cover and simmer gently until the lentils are tender, about 1 hour.

  2. Discard bay leaf. Using a blender or imersion blender puree the soup. Add the potato and simmer until potato is tender, about 20 minutes.

  3. Season to taste with salt and pepper and serve with crusty bread.
