  1. MANICOTTI

  2. 8 uncooked manicotti

  3. FILLING

  4. 1/2 lb. bulk Italian sausage

  5. 1/2 cup chopped onion

  6. 1 (4-oz.) can mushroom pieces and stems, drained

  7. 1 1/2 cups finely chopped cooked turkey or chicken

  8. 2 egg yolks

  9. 1 (9-oz.) pkg. frozen spinach in a pouch, thawed, squeezed to drain*

  10. 4 oz. (1 cup) shredded mozzarella cheese

  11. 1/2 cup grated Parmesan cheese

  12. 1 (14-oz.) jar spaghetti sauce

  13. WHITE SAUCE

  14. 2 tablespoons margarine or butter

  15. 2 tablespoons all-purpose flour

  16. 1 1/2 cups whipping cream

  17. 1/3 cup grated Parmesan cheese

  18. Dash garlic powder

  19. Dash nutmeg

  1. Cook manicotti to desired doneness as directed on package. Drain; place in cold water.

  2. Meanwhile, heat oven to 350°F. In large skillet, brown sausage, onion and mushrooms. Remove from skillet; drain on paper towels. In large bowl, combine sausage mixture, turkey, egg yolks, spinach, mozzarella and 1/2 cup Parmesan cheese; mix well.** 3 Drain manicotti; fill each with sausage mixture. Pour 1/2 the spaghetti sauce into ungreased 13x9-inch (3-quart) baking dish. Place filled manicotti side by side over sauce in dish.

  3. Melt margarine in medium saucepan over medium heat. Stir in flour; cook until smooth and bubbly, stirring constantly. Gradually stir in whipping cream; cook until slightly thickened, stirring constantly. Stir in 1/3 cup Parmesan cheese, garlic powder and nutmeg; blend well. Pour white sauce over manicotti in baking dish. Pour remaining spaghetti sauce over top.

  4. Bake at 350°F. for 35 to 40 minutes or until bubbly.

  5. *To quickly thaw spinach, cut small slit in center of pouch; microwave on HIGH for 2 to 3 minutes or until thawed. Remove spinach from pouch; squeeze dry with paper towels.

  6. **For a more evenly chopped filling, place cooked sausage, onion, mushrooms, turkey and spinach in food processor. Cover; process with on/off pulses until of desired consistency.

  7. Prepare recipe as directed; do not bake. over with foil; freeze. When ready to use, do not thaw; bake, covered, at 350°F. for 1 hour 25 minutes. Uncover; bake an additional 15 minutes or until mixture is thoroughly heated.
