  1. 2 tablespoons 30ml Oil

  2. 4 Fresh red chilies - seeded and sliced

  3. 3 Garlic cloves - sliced

  4. 1 1/4 lbs 567g / 20oz Chicken breast - sliced

  5. 1 Onion - sliced

  6. 2 tablespoons 30ml Oyster sauce

  7. 1 tablespoon 15ml Fish sauce

  8. 1 tablespoon 15ml Tamarind sauce

  9. 2 teaspoons 10ml Brown sugar

  10. 1/2 cup 118ml Straw mushrooms

  11. 1/2 cup 118ml Bamboo shoots - (strips)

  12. 1/2 Lime - juiced

  13. 6 Coriander - (fresh)

  1. *NOTE: (Fish sauce is available from Asian food shops. Alternatively substitute twice this amount soy sauce.)

  2. Instructions: heat oil in wok, add chilies and garlic and fry until crisp and golden. Drain onto paper towels (but leave oil in the wok). Fry chicken and onion in oil until chicken is cooked. Add lime juice and vegetables. Fry for about 2 minutes. Add sauce.
