  1. 2/3lb (300g) raw medium shrimps

  2. 1 1/2 Tbsp egg-white

  3. (A) 1/3 tsp salt

  4. dash of pepper

  5. 2 1/2 Tbsp corn starch

  6. (B)

  7. 1 red hot chili pepper, minced

  8. 1 tsp minced garlic

  9. 1 Tbsp vinegar

  10. 1/2 Tbsp lemon juice

  11. 3 Tbsp cold water

  12. 1 Tbsp fish sauce

  13. 1 Tbsp sugar

  1. Mix all ingredients of (B) as a dipping sauce.

  2. Add 1 Tbsp of cornstarch to egg-white and beat to make batter.

  3. Wash, wipe dry, and mince shrimps. Add (A) to shrimps and mix until they become a thick paste.

  4. Shape into small patties. Coat with batter and deep dry until done. Serve with dipping sauce.
