  2. RUM-GLAZED APPLE CHEESECAKE

  6. CRUST:

  7. 1 1/2 c Graham cracker crumbs

  8. 3 tb Sugar

  9. 1/4 c Butter,melted

  10. FILLING:

  11. 2 pk Soft cream cheese (8oz ea)

  12. 2 Eggs

  13. 1/2 ts Vanilla

  14. TOPPING:

  15. 4 c Peeled, thinly sliced

  16. -McIntosh apples

  17. 1/2 ts Cinnamon

  18. 1/2 c Sugar

  19. 1/2 c Pecans, chopped

  20. GLAZE:

  21. 1/3 c Apple jelly

  22. 1 tb Rum

  23. Combine crumbs, sugar and butter. Press into bottom of

  24. 9 inch springform pan. Bake at

  25. 3250 degrees for minutes. Combine cream cheese and sugar, mixing at

  26. medium speed until well blended. Add eggs, one at a

  27. time, mixing well after each addition. Blend in

  28. vanilla; pour over crust. Toss apples with sugar and cinnamon. Spoon apple mixture over cream cheese;

  29. 350 degrees for 1 hour

  30. and 10 minutes. Remove from oven. Heat apple jelly

  31. and rum together. Spoon over cheesecake; cool. Loosen

  32. cake from rim of pan and remove carefully. Chill

  33. cheesecake in refrigerator before serving.
