  1. 1/2 cup flour

  2. 1/2 tsp baking soda

  3. 2 tsp baking powder

  4. 1/4 tsp ginger

  5. 1/4 tsp nutmeg

  6. 1/2 tsp cinnamon

  7. 1/4 cup crushed all-bran cereal (about 1/3-1/2 cup whole)

  8. 2 large ripe banana , mashed

  9. 1 tbsp vegetable oil

  10. 1/3 cup unsweetened applesauce

  11. 1/4 cup honey

  12. 1/2 cup non-fat vanilla or strawberry yogurt

  13. 1/2 large banana , sliced, for topping

  1. Preheat oven to 425F, and grease 12 muffin cups.

  2. Combine all the dry ingredients in a large mixing bowl.

  3. Combine all the wet ingredients in a small mixing bowl.

  4. Pour the wet ingredients into the dry ingredients and gently mix until just combined.

  5. Top with sliced banana, pushing slices into muffin tops so they dont fall out.

  6. Bake for 15-20 min.
