  8. 8 juice

  9. 1/4 c Salad oil

  10. 2 tb Vinegar

  11. 6 oz Pkg Italian Dressing mix

  12. 2 c Cauliflowerets

  13. 2 c Sliced fresh mushrooms

  14. 1 c Sliced carrots

  15. 1 c Sliced green pepper

  16. 1 c Sliced cucumber

  17. To make marinade: In jar, combine V-8 juice, salad

  18. oil, vinegar, and salad dressing mix; shake well. In

  19. bowl, combine vegetables; Pour marinade over all.

  20. Marinate in refrigerator for at least 4 hours,

  21. stirring occasionally.*

  22. NOTE: If not going to be eaten the same day, perhaps

  23. wait to add mushrooms and cucumbers until a few hours

  24. before serving -- they will go limp instead of

  25. remaining crisp. The balance can be combined and marinated up to a couple of days ahead of serving in

  26. the refrigerator.

  27. I have found it works best if you marinate in a

  28. tightly covered bowl. Then when you are in the kitchen

  29. and think about it, you can just turn it upside down,

  30. shake it a bit, and put it back in the frig instead of
