  1. Avocado and Shrimp Salad

  2. 3 tablespoons olive oil

  3. 2 tablespoons white wine vinegar

  4. 1 teaspoon Dijon mustard

  5. 1 pound shrimp

  6. 1 cup mayonnaise

  7. 2 tablespoons bottled chili sauce

  8. 1 clove garlic, crushed

  9. Tabasco sauce

  10. 1 avocado

  11. 1/2 lemon, juiced

  12. 2 tablespoons fresh dill weed

  13. 2 tablespoons fresh chives

  14. Cook and cube shrimp. Whisk together first 3 ingredients until

  15. well blended. Add to shrimp, toss thoroughly, cover and marinate.

  16. Meanwhile, whisk mayonnaise, chili sauce, garlic, Tabasco, salt and pepper until smooth. Set aside. Cube avocado; sprinkle with lemon

  17. juice. Drain shrimp. Add avocado, dill and chives and toss lightly.

  18. Fold in enough mayonnaise mixture to coat lightly. Taste and adjust

  19. seasoning. Cover and chill until ready to serve. Divide salad

  20. among chilled plates.
