  1. 1/4 c Butter

  2. 1/4 c Oil (olive oil may be used)

  3. 750 g Potatoes, peeled and sliced

  4. 1/4" thick rounds

  5. 1/2 Level teaspoon salt

  6. 1/2 Freshly ground black pepper

  7. 1 Level tablespoon finely

  8. -chopped parsley 1. in a pan heat butter and oil. fry potatoes on both sides until golden

  9. 2. season potatoes with salt and pepper, transfer to a heated plater and serve immediately sprinkle with parsley. serves
