  1. 1 cup chopped hazelnuts

  2. 1 cup granulated sugar

  3. 1/2 cup light corn syrup

  4. 1/2 teaspoon salt

  5. 1 tablespoon butter or margarine

  6. 1 teaspoon vanilla extract

  7. 1 teaspoon baking soda

  1. Butter a baking sheet and set aside. In a microwave-safe bowl, combine hazelnuts, sugar, corn syrup and salt. Microwave on HIGH for 7 to 8 minutes, stirring twice. Add butter and continue cooking for 2 to 3 minutes on HIGH. Add vanilla and baking soda, mixing thoroughly. Pour onto prepared baking sheet. Cool slightly, then stretch, if desired, for thinner brittle. Cool and break into pieces.
