  1. 1 C finely chopped fresh parsley

  2. 1 C finely chopped scallion s

  3. 1/2 C Dijon mustard (spicy)

  4. 3/4 C French dressing (fat free)

  5. pounds extra large shrimp -26/30

  1. Mix parsley, scallions, and mustard to paste.

  2. Add French dressing and mix well with a whisk.

  3. Add salt and pepper to taste. Add more French dressing if dry.

  4. Add shrimp to marinade. Marinate for about hour or overnight.

  5. Serve on platter on top of baby or Boston lettuce and garnish with fresh parsley if desired
