  2. AFRICAN SPINACH & PEANUT BUTTER STEW

  6. 2 Onions

  7. 2 Tomatoes (peeled or tinned)

  8. 2 lb Spinach

  9. 4 tb Peanut butter (not sweet!)

  10. Salt

  11. Pepper

  12. Oil for frying

  13. Slice the onions and fry in oil until soft. Peel the

  14. tomatoes in boiling water (or use tinned tomatoes).

  15. Slice and add to the onions.

  16. Wash, trim and chop the spinach coarsely. Add to the

  17. stew and cook, covered, over a medium heat for 5

  18. minutes, stirring to prevent sticking.

  19. Thin the peanut butter with hot water to make a smooth

  20. paste. Add to the stew. Season with salt and pepper

  21. and cook for another 5 - 10 minutes, stirring and adding water if necessary to prevent sticking. - - - - - - - - - - - - - - - - - -
