  1. 2 tbsp. Butter

  2. 2 cups Assorted Wild Mushrooms, chopped

  3. 1/2 cup Chopped White Onions, chopped

  4. 2 tbsp. Chopped Garlic, minced

  5. 2 cups Arborio Rice

  6. 5 cups Chicken or Veal Stock

  7. 1 cup Heavy Cream

  8. 1 pinch Fresh ground nutmeg

  9. 1/2 cup Parmesan Cheese

  10. 1/4 cup Chopped; tarragon, parsley & chives mixed Salt &

  1. Preparation : Method: Melt butter and mushrooms, onions and garlic for 5 minutes. Add rice and saut for another 2 minutes. On a medium heat add the chicken stock one-cup at a time stirring until well incorporated before adding the next cup. Once chicken stock is absorbed, add cream and stir until well incorporated. Stir in nutmeg, herbs and season with salt and pepper. Garnish with shavings of Parmesan and serve immediately.
