  2. 1 cup prepared Italian salad dressing

  3. 1 tbsp. fresh lemon juice

  4. 1/4 tsp. salt

  5. 1/4 tsp. pepper

  6. 1 large zucchini, thinly sliced

  7. 1/2 medium cauliflower, broken into small florets

  8. 1/4 cup sliced green onions

  9. 8 cups salad greens

  10. 6 slices salami, cut into strips

  11. 4 large mushrooms, sliced

  12. 2 medium tomatoes, cut into wedges.

  13. 1/4 pound provolone cheese, cut into strips

  14. 2 ounce can black olives, drained

  15. 1 cup seasoned croutons

  16. 1/4 cup grated parmesan cheese

  1. Combine dressing, lemon juice, salt and pepper in a medium bowl. Whisk well to combine. Add zucchini, cauliflower and green onions and toss to coat. Cover and refrigerate 8 hours or overnight. Mix together greens, salami, mushrooms, tomatoes, provolone and olives in a large bowl. Add vegetables with marinade and toss well. Sprinkle croutons and parmesan over top and toss again. Serve immediately.
