    1. 3 medium potatoes -- cooked & mashed w/ skim milk

    2. 3 1/2 ounces neufchatel cheese

    3. 1 egg -- lightly beaten

    4. 2 tablespoons onion -- chopped

    5. 1 tablespoon parsley -- chopped paprika

    1. Preparation : Combine mashed potatoes and cheese, beating until well blended. Stir in egg, onion and parsley. Spoon into well-greased 1-quart casserole dish. Sprinkle with paprika. Bake at 400F for 30 minutes or until heated through.
