  1. 3/4 C sugar

  2. 1/4 C plus

  3. 2 teaspoons cornstarch

  4. 1/8 tsp salt

  5. 3 egg yolks, beaten

  6. 3 C milk

  7. 1/2 tsp vanilla extract

  8. 1 baked 9-inch pastry shell

  9. 3/4 C whipping cream

  10. 1/3 C sifted powdered sugar

  11. 1 C flaked coconut

  1. Combine sugar, cornstarch, and salt in a heavy saucepan; stir well.

  2. Combine egg yolks and milk; gradually stir into sugar mixture.

  3. Cook over medium heat, stirring constantly, until mixture thickens and boils.

  4. Boil 1 minute, stirring constantly.

  5. Remove from heat; stir in butter, vanilla and 1/2 cup coconut.

  6. Immediately pour into pastry shell.

  7. Cover filling with wax paper and let cool for 30 minutes.

  8. Chill until firm.

  9. Beat whipping cream until foamy; gradually add powdered sugar, beating until soft peaks form.

  10. Spread whipped cream over filling.

  11. Add 1/2 cup coconut to top of whipped cream for desired look.
