  1. olive oil

  2. 200g red peppers, finely chopped

  3. 2 garlic cloves, crushed

  4. 50g onions, finely chopped

  5. 150g chilli jam, such as Tracklements

  6. 100ml fish stock or water

  7. 300g chopped tomatoes

  8. 350g fresh crab meat

  9. 250g medium egg noodles

  10. 1 tbsp chopped coriander leaves

  11. salt and freshly ground black pepper

  1. Heat some olive oil in a pan and add the peppers, garlic, onion and a pinch of salt. Cook over a medium heat until soft. Add the chilli jam, fish stock and chopped tomatoes and simmer for 20 mins.

  2. In the meantime, cook and drain the noodles according to their instructions.

  3. Add the chopped herbs and crab meat to the sauce and stir in the cooked noodles. Toss together well and season.
