  2. 1 3/4 cups all-purpose flour

  3. 1/2 teaspoon baking soda

  4. 1/4 teaspoon salt

  5. 1/3 cup granulated sugar

  6. 1 1/4 teaspoons cream of tartar

  7. 3/4 cup mashed banana

  8. 1/4 cup egg substitute

  9. 1/4 cup skim milk

  10. 1/4 cup margarine, melted

  11. 1 teaspoon vanilla extract

  12. 1 tablespoon coconut flakes

  13. 1/4 teaspoon ground cinnamon

  14. Vegetable cooking spray

  1. Preheat oven to 350 degrees F.

  2. Combine first 5 ingredients in a large bowl.

  3. Make a well in center of mixture.

  4. Combine banana and next 4 ingredients.

  5. Add to dry mixture, stirring until moistened.

  6. Combine coconut and cinnamon. Set aside.

  7. Coat an 8 inch square pan with cooking spray.

  8. Spoon batter into pan. Sprinkle with coconut mixture.

  9. Bake for 20 to 25 minutes or until a wooden pick inserted in center comes out clean.

  10. Cool in pan on a wire rack 5 minutes.

  11. Remove from pan. Let cool on wire rack.
